Steel is a combination of iron and carbon, making it durable and strong. However, it’s prone to rusting, so manufacturers add chromium to give it the signature shine that makes the product stainless. Nickel also increases the steel’s brightness and corrosion resistance.

This resulting stainless steel sheet is still unsuitable for cooking due to its poor thermal conductivity. So, during a process called cladding, a layer of aluminum or copper is placed between two stainless steel sheets to achieve thermal conduction.
