  • 2 large sweet potatoes, peeled
  • cup unsalted butter
  • 8-10 fresh sage leaves
  • 2 garlic cloves, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup Parmesan cheese, freshly grated
  • 1 tsp maple syrup (optional, for a subtle sweetness)

  • Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin or small baking dish.
  • Thinly slice the sweet potatoes with a mandoline or a sharp knife and set aside.
  • In a small saucepan, melt the butter over medium heat. Once melted, add the sage leaves and cook until they are crispy (about 1-2 minutes). Remove the sage and set aside.
  • Continue cooking the butter, stirring frequently, until it turns golden brown and smells nutty (another 2-3 minutes). Remove from heat and stir in the minced garlic, salt, and pepper.
  • In each muffin cup or in your baking dish, layer 6-8 sweet potato slices, brushing each layer with the garlic brown butter mixture. Place one crispy sage leaf between a couple of the middle layers for extra flavor.
  • Cover the muffin tin loosely with foil and bake for 30 minutes. Remove the foil, drizzle a small amount of maple syrup (optional) over the top of each stack, and bake uncovered for another 15-20 minutes, or until the edges are golden and the centers are fork-tender.
  • Remove the stacks from the oven and immediately sprinkle with freshly grated Parmesan for a salty, cheesy finish. Top each stack with a crispy sage leaf for a beautiful presentation.
