For the salad:

  • 8 oz spaghetti
  • 1 lb shrimp, peeled & deveined
  • 3 tbsp olive oil, divided
  • 3 cloves garlic, minced
  • 1 tsp red pepper flakes (optional, for a little heat)
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh arugula
  • ¼ cup shaved parmesan cheese

For the lemon-parmesan dressing:

  • ¼ cup extra virgin olive oil
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tsp lemon zest
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp black pepper

  • Heat 2 tbsp olive oil in a large skillet over medium heat.
  • Add garlic and red pepper flakes, sauté for 30 seconds until fragrant.
  • Add shrimp and cook for 2-3 minutes per side until pink and opaque. Remove from heat and set aside.

  • In a small bowl, whisk together olive oil, lemon juice, zest, honey, Dijon mustard, salt, and pepper.
  • In a large bowl, toss the cooked spaghetti with sun-dried tomatoes and arugula.
