Classic Caesar dressing consists of mayo, anchovies, garlic, lemon, and Parmesan and is used to dress a Caesar salad.

However, this dressing is so tasty you can even use it as a spread for sandwiches, a dip for veggies and chips, or as a sauce for chicken.

This recipe is a show-stopper because, instead of using raw garlic, we have roasted the garlic whole beforehand to take away the garlic heat and add a sweet, caramelized element to the dressing.

  • 1 head garlic, roasted
  • ½ cup mayonnaise (or Greek yogurt for a lighter option)
  • cup freshly grated Parmesan cheese
  • 2 anchovy fillets (or 1 tsp anchovy paste)
  • 1 tsp Dijon mustard
  • 2 tbsp fresh lemon juice (plus zest for extra zing!)
  • 1 tsp Worcestershire sauce
  • ¼ cup olive oil
  • Salt and freshly cracked black pepper to taste

  • Preheat your oven to 400°F (200°C).
  • Slice the top off a whole head of garlic, drizzle with olive oil, and wrap in foil.
  • Roast for 35–40 minutes until the cloves are golden and soft. Let it cool.

  • Squeeze the roasted garlic cloves into a blender or food processor.
  • Add mayonnaise, Parmesan cheese, anchovies, Dijon mustard, lemon juice, Worcestershire sauce, and a pinch of salt and pepper. Blend until smooth.
  • With the blender running, slowly drizzle in the olive oil until the dressing is creamy and well combined.
