  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp cardamom

  • 1 cup pumpkin puree (not pumpkin pie filling)
  • ½ cup apple cider
  • ½ cup vegetable oil
  • 2 large eggs
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp vanilla extract
  • 1 medium apple ,peeled and diced into small chunks

For the Streusel Topping:

  • ¼ cup all-purpose flour
  • ¼ cup brown sugar
  • ½ tsp cinnamon
  • 3 tbsp cold butter ,cubed

  • Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.

  • In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, cardamom, ginger, and cloves. Set aside.

  • In a large bowl, mix the pumpkin puree, apple cider, vegetable oil, eggs, granulated sugar, brown sugar, and vanilla extract until smooth and well combined.

  • In a small bowl, combine flour, brown sugar, and cinnamon. Add the cold, cubed butter, and use your fingers to rub the mixture together until crumbly.
  • Pour the pumpkin bread batter into the prepared loaf pan. Evenly sprinkle the streusel topping over the batter. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.

Is it cheaper to make my own pumpkin puree?

Yes! If you have the time, roasting and pureeing your own pumpkin will be cheaper than buying it canned. It will also probably make enough for you to freeze the rest for future pumpkin bread or even soups.

Is pumpkin bread good or bad for you?
