This pineapple upside down mimosa takes this brunch classic to the next level!
There are two theories about where mimosas originated. Some say that they were created in Paris at The Ritz by a bartender in 1925.
The other story is that legendary director Alfred Hitchcock invented them in 1940s San Francisco. We will probably never know which is true.

A regular mimosa contains simply equal parts orange juice and champagne/sparkling wine.
But, in our recipe we wanted to give this classic a little twist but combining it with a beloved dessert; pineapple upside down cake.
We have swapped the orange juice for pineapple juice and included caramelized muddle pineapple slices for an added depth of flavor.
We also splashed in a bit of dark rum to meld the tropical flavors together.

Caramelized Pineapple Upside-Down Mimosa
Ingredients
- 1 cup fresh pineapple slices
- 2 tbsp brown sugar
- 1 tbsp butter
- 1 oz dark rum (optional, for extra depth)
- 1 cup pineapple juice, chilled
- 1 bottle champagne or prosecco, chilled
- 1 oz grenadine
- Maraschino cherries, for garnish

- Heat a skillet over medium heat. Add butter and let it melt.
- Sprinkle in the brown sugar and stir until it starts to dissolve.
- Add the pineapple slices and cook for 2-3 minutes on each side until golden and caramelized.
- (Optional) Splash in dark rum for extra depth—flambé for flair if you're feeling fancy!
- Remove from heat and let cool slightly.
- Transfer a few pieces of the caramelized pineapple to a bowl or cocktail shaker.
- Muddle them until they release their juices and break down.
- Spoon about 1 tablespoon of muddled caramelized pineapple into each champagne flute.
- Pour in ¼ cup pineapple juice per glass.
- Slowly top with champagne until the glass is about ¾ full.
- Drizzle ¼ oz grenadine into each drink—it’ll sink and create that classic upside-down cake effect!
- Skewer a maraschino cherry and a piece of caramelized pineapple on a cocktail pick for garnish.
- Serve immediately and enjoy the delicious caramelized pineapple goodness.
