For the Toast

  • 1 slice sourdough or whole-grain bread, toasted
  • ½ ripe avocado
  • Salt and pepper, to taste
  • 1 egg

For the Hollandaise Sauce

  • 2 large egg yolks
  • ½ tbsp lemon juice
  • ¼ cup unsalted butter, melted
  • Pinch of salt
  • Dash of cayenne pepper

  • Fresh chives or parsley, finely chopped
  • Optional: chili flakes for heat

Step 1- Prepare the Hollandaise Sauce

  • In a heatproof bowl, whisk egg yolks and lemon juice until thick and frothy.
  • Place the bowl over a pot of simmering water (do not let the bowl touch the water).
  • Gradually drizzle in melted butter while whisking constantly until the sauce thickens.
  • Season with salt and cayenne (if using). Keep warm.

Step 2- Poach the Egg

  • Heat a small pot of water until it’s gently simmering. Add a splash of vinegar.
  • Crack the egg into a small bowl, then carefully slide it into the water.
  • Cook for 3-4 minutes until the white is set but the yolk is still runny. Remove with a slotted spoon.

Step 3- Assemble the Toast

  • Toast your bread to golden perfection.
  • Smash avocado onto the toast with a fork. Season with salt and pepper.
  • Place the poached egg on top of the avocado.

Step 4- Drizzle and Garnish

  • Spoon the warm hollandaise sauce over the egg.
  • Sprinkle with chopped chives or parsley for a fresh pop of color. Add chili flakes for a spicy kick if desired.
