Borealis Bistro is the student-run restaurant associated with the University of Alaska Fairbanks Community and Technical College (CTC) Culinary Arts Program. Located in Fairbanks, Alaska, the program provides comprehensive training designed to prepare students for careers in the culinary industry. It serves as a practical learning environment where students gain real-world experience in food preparation, service, and kitchen management.
The UAF CTC Culinary Arts Program offers formal academic credentials, including a certificate and an Associate of Applied Science degree in Culinary Arts. The curriculum covers fundamental culinary techniques, advanced cooking methods, baking, international cuisines, and the operational aspects of running a professional kitchen, such as cost control and purchasing.
The program’s focus is on professional culinary education rather than recreational cooking classes for the general public. Students enroll in structured courses over an extended period to develop the skills and knowledge necessary for professional roles within the food service sector.
