  • ½ tsp baking soda

  • ½ tsp garlic powder
  • 6 tbsp cold unsalted butter, cubed
  • ¾ cup sharp cheddar cheese,
  • ½ cup cooked bacon, crumbled
  • 2 tbsp fresh chives, finely chopped
  • ¾ cup buttermilk, cold (plus more for brushing)

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and garlic powder.
  • Using a pastry cutter or your fingers, cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs.
  • Gently fold in the cheddar cheese, crumbled bacon, and chopped chives, making sure they are evenly distributed.
  • Pour in the cold buttermilk and stir gently with a fork or spatula until the dough just comes together. Be careful not to overmix!
  • Turn the dough onto a lightly floured surface and knead 3–4 times to bring it together. Pat the dough into a 1-inch thick rectangle. Using a 2 ½-inch biscuit cutter, cut out biscuits and place them on the prepared baking sheet. Re-roll scraps as needed.
  • Brush the tops of the biscuits with a little buttermilk to encourage browning. Bake for 12–15 minutes, or until the tops are golden brown.
  • Let the biscuits cool for a few minutes before serving. They’re best warm with butter or as a base for breakfast sandwiches!
