Ingredients
  

For the Shrimp:

  • 1 lb jumbo shrimp , peeled and deveined
  • 2 cloves garlic , minced
  • ¼ cup olive oil
  • 1 lemon (Juice and zest)
  • 1 lime (Juice and zest)
  • 2 tbsp honey
  • 1 tsp chili flakes
  • ¼ cup cilantro , chopped
  • Salt and black pepper to taste

For the Veggies:

  • 1 red bell pepper , cut into 1-inch pieces
  • 1 yellow bell pepper , cut into 1-inch pieces
  • 1 red onion , cut into wedges
  • 1 pint cherry tomatoes

For the Dipping Sauce:

  • 1 avocado (ripe)
  • ¼ cup Greek yogurt
  • Juice of 1 lime
  • ¼ cup cilantro leaves
  • Salt and pepper to taste

Prepare the Shrimp Marinade

  • In a large bowl, mix together garlic, olive oil, lemon juice and zest, lime juice and zest, honey, chili flakes, and cilantro. Season with salt and pepper.
