Elote-style corn is a traditional Mexican street dish that consists of grilled corn with a Cotija cheese, chili, mayo, and garlic sauce. It’s juicy, smoky, and irresistibly addictive!
It’s an ideal side for a Mexican meal or as a shared appetizer.
In our recipe, we have used roasted garlic to add a sweet and umami kick to the mayo-based sauce. We have also swapped out Parmesan cheese for a twist on the expected Cotija.
The whole dish is finished off with zesty lemon and herbaceous parsley to balance out the flavors perfectly.

- 4 ears of fresh corn, husked
- 2 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ¼ tsp salt
- ¼ tsp black pepper
Garlic Parmesan mayo:
- ⅓ cup mayo
- 1 whole head garlic, roasted*see notes
- ½ cup finely grated Parmesan
- Zest of 1 lemon
- 1 tbsp lemon juice
- 1 tbsp chopped parsley (plus extra for garnish)
- Cracked black pepper to taste

- Preheat oven to 425°F. Cut each corn cob lengthwise into quarters (aka ribs). Pro tip: microwave corn for 30 seconds to soften slightly before cutting—it makes slicing safer and easier!
- Toss corn ribs with olive oil, smoked paprika, garlic powder, salt, and pepper. Arrange on a parchment-lined baking sheet, cut side down. Roast for 20–25 minutes until the edges curl and get golden brown.
- While the corn roasts, mash the roasted garlic into a paste. Mix with mayo, Parmesan, lemon zest, lemon juice, parsley, and black pepper. Taste and adjust with more zest or garlic if you love bold flavor.
- Once the corn ribs are done, brush or spoon on the garlic Parmesan mayo while they’re still warm. Garnish with more grated Parmesan, parsley, and a pinch of lemon zest for extra zing.
