  • ½ cup finely grated Parmesan
  • Zest of 1 lemon
  • 1 tbsp lemon juice
  • 1 tbsp chopped parsley (plus extra for garnish)
  • Cracked black pepper to taste

  • Preheat oven to 425°F. Cut each corn cob lengthwise into quarters (aka ribs). Pro tip: microwave corn for 30 seconds to soften slightly before cutting—it makes slicing safer and easier!

  • Toss corn ribs with olive oil, smoked paprika, garlic powder, salt, and pepper. Arrange on a parchment-lined baking sheet, cut side down. Roast for 20–25 minutes until the edges curl and get golden brown.
