Ingredients
  

For the shrimp:

  • 1 lb large shrimp peeled & deveined
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional, for heat)
  • ½ tsp smoked paprika
  • 2 tbsp olive oil

For the pasta:

  • 8 oz linguine or spaghetti
  • 3 tbsp salted butter
  • 4 cloves garlic, minced
  • ½ cup sundried tomatoes, chopped (packed in oil, drained)
  • ½ cup dry white wine (or chicken broth)
  • ½ cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 1 cup fresh basil, roughly chopped
  • Juice of ½ lemon

  • Bring a large pot of salted water to a boil. Cook the pasta 1 minute less than the package instructions. Reserve ½ cup pasta water, then drain and set aside.

  • Toss shrimp with salt, pepper, paprika, and red pepper flakes.

  • Heat olive oil in a large skillet over medium-high heat.
  • Add shrimp and sear for 1-2 minutes per side until pink and opaque. Remove and set aside.

  • Add garlic and sauté 30 seconds until fragrant.

  • Stir in heavy cream and Parmesan. Let simmer until thickened.
  • Toss in the cooked pasta and shrimp. Add reserved pasta water a splash at a time until silky.
