For the dough:

  • 3 cups all-purpose flour
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 cup warm milk (110°F)
  • ¼ cup unsalted butter, melted
  • 1 large egg

For the garlic butter topping:

  • 1 head garlic
  • ½ cup salted butter, softened
  • ½ cup parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh rosemary, chopped
  • Sea salt, to taste

Prepare the Dough

  • In a small bowl, mix warm milk, sugar, and yeast. Let it sit for 5 minutes until bubbly.
  • In a large bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture, melted butter, and beaten egg. Mix until a dough forms.

  • Knead the dough on a floured surface until it becomes smooth, elastic, and can be stretched thin without breaking.

  • Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour or until doubled in size.

Roast the Garlic

  • While the dough rises, roast the garlic. Cut off the top of the garlic head to expose the cloves, drizzle with olive oil, and wrap in foil.

  • Bake at 400°F (200°C) for 30-40 minutes until the garlic is soft and golden. Let it cool, then squeeze the roasted garlic cloves out and mash them into a paste.

Prepare Garlic Butter

  • In a bowl, mix softened butter, mashed roasted garlic, Parmesan cheese, parsley, rosemary, and a pinch of sea salt. Set aside.

Shape the Rolls

  • Once the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a ball and shape the dough to create a smooth, taut surface. (Reference the video for a straightforward guide on how to shape a roll perfectly.) Place them on a greased baking sheet.

Bake the Rolls

  • Preheat the oven to 375°F (190°C). Brush each roll generously with the garlic butter mixture.
  • Bake for 18-20 minutes or until the rolls are golden brown on top. In the last 5 minutes of baking, brush the tops again with more garlic butter for extra flavor!

  • Once baked, brush the rolls with any remaining garlic butter and sprinkle with extra Parmesan and herbs, if desired. Serve warm!

What flour is best for bread rolls? 

All-purpose flour is ideal for bread rolls, but you can also use bread flour for a similar result.

Why are my bread rolls hard?

This is likely because the rolls are under-kneaded or under-risen. Under-kneaded rolls will not have the elasticity needed to rise easily, resulting in a small, hard roll. You will have a similar result if you don’t let your rolls rise for long enough. They need time to grow and create CO2 bubbles in the dough that give bread its fluffy texture. Make sure your dough doubles in size for the first rise and grows by 50% on the second rise to ensure your rolls are light and fluffy.

Should I butter my rolls before baking?
